Choc Chip Muesli Bars KVHW

Chocolate Chip Muesli Bars (dairy free)

Ingredients – makes 14 servings

225 grams Oats (buy Gluten Free if needed)
25 grams Sunflower seeds
25 grams Pepitas
125 grams Coconut Oil (for dairy free) or Butter
25 grams Desiccated Coconut
125 grams (mixture of coconut sugar, maple syrup or honey or your choice)
50 grams dairy free Chocolate Chips

Instructions TMX (see below for stovetop)

Heat Oven to 150 degree C

  1. Lightly grease a 17 cm by 27 cm Slice Pan with coconut oil
  2. Add Coconut Oil or Butter to 100grams Sugar . 5 mins, Varoma temp Sp2
  3. Add all other ingredients (except chocolate) and grind depending on texture required. I prefer them less chunky so I do 30 secs, Sp 5
  4. Press mixture into pan and sprinkle with choc chips.
  5. Bake for 20- 30 mins until lightly browned.
  6. Cool and turn out onto a chopping board.
  7. Slice into 14 bars
  8. Keep In fridge for 1 week or freezer.

Stovetop Instructions

  1. Heat Oven to 150 degree C
  2. Lightly grease a 17 cm by 27 cm Slice Pan with coconut oil
  3. Add Coconut Oil or Butter to 100grams Sugar and heat gently until dissolved.
  4. In a food processor add all other ingredients (except chocolate) and blitz depending on texture required. I find kids prefer them less chunky.
  5. Poor into pan and combine
  6. Bake for 20-30 mins until lightly browned
  7. Cool and turn out onto chopping board
  8. Slice into 14 bars
  9. Keep In fridge for 1 week or freezer.

Tips for variations:

  • Use Nuts instead of sunflower seeds (if not for school lunches).
  • Use half Coconut Oil and half butter if no dairy requirements. ¬†This makes bars slightly less oily when they have been out of the fridge for a few hours.

Costco stock Organic Desiccated Coconut, Maple Syrup and Organic Coconut Oil at very reasonable prices. They also do various different organic nuts and trail mix, which could be used in this recipe.
