Veggie Laden Chilli Con Carne

It is actually way harder than we think to eat enough Vegetables in a day and it is definitely tricky to get enough into our kids.  This recipe helps hide the Veg away, adds flavour and pads out my preferred choice of grass fed or Organic Beef.  To me this is a WIN WIN situation.  We eat more vegetables as a family and I can use less meat and buy quality, instead of mass produced chemical laden meat.

Ingredients

• 8 teaspoons Cumin
• 6 teaspoons Coriander
• 8 heaped teaspoons Sweet Paprika
• 3 flat teaspoon Chilli
• 3 medium Onion (300g)
• 3 clove Garlic
• 1 tablespoon Coconut Oil
• 180g Carrot (2 medium)
• 270 g Red Capsicum (3 x small one or other Veg on hand)
• 120g Kale or Spinach
• 2 tins Tomatoes
• 1.5 kg organic Beef Mince
• 1 tablespoon Coconut Oil
• 2 tins Kidney Beans

 

Instructions

  1. Chop and sauté cumin, coriander, sweet paprika, chilli, onion, garlic, coconut oil (speed 6 6 seconds) or chop by hand
  2. 5 mins 100 speed 0.5 (sauté in pan)
  3. Add together carrot, red capsicum, kale or spinach – 10 seconds speed 6 (using spatula to help) scrape and repeat. (Or blend veggies to a pulp in food processor with tomatoes and add to spices in pan)
  4. Add tomatoes and cook 10 mins on 100 speed 1 or cook in pan on low with spices.
  5. Blend 10 seconds speed 6 to smooth sauce.
  6. Brown mince in large pan with 3 flat tablespoon of stock paste or 3 organic stock cubes.
  7. Add sauce when sautéed and add kidney beans.
  8. Simmer on low with lid on for 30 minutes
  9. Serve with Cauliflower rice for extra Veg or Brown Rice.
  10. ENJOY
